Vegetarian Sausage Rice

Scrumptious one pot dish using Jasmine rice rather than your normal white or brown rice. Just a hint of sweetness combined with all the other ingredients will warm your tummy.

 Finished pot of dinner steaming away on top of the stove. I wonder if there will be any left?



Recipe below.....


2 cups pepper, chopped. The recipe called for green but I used one yellow pepper instead.
1 can red kidney beans, drained.
1 can diced tomatoes
1 onion, chopped
2 cloves garlic, chopped
2 stalks of celery, chopped small
1 cup veggie broth
3/4 cup uncooked rice - I used Jasmine and highly recommend it.
1 teas. salt
1 teas. hot pepper sauce
1/2 teas. thyme
3 bay leaves
2 meatless italian sausage, sliced
cilantro for garnish (optional)

Saute in oil (I use coconut oil or olive is good, too) the onion, peppers, garlic and celery in a medium pot until the onion is translucent. Add all the other ingredients, cover and cook until the rice is done - 15-20 minutes. Remove the bay leaves and top with cilantro.

I'll be serving this with Texas toast and telling my kids -- eat the food if you want the Texas toast. But once they take their first bite they will love it!
