Good for lunch or dinner -- all my kids like this quick and nutritious meal:
1 can drained beans (kidney, pinto, great northern)
1 onion, chopped
2 handfuls shredded mozzarella (2 handfuls? maybe 1 cup?)
1/2 can chopped black olives
1/2 cup (maybe) Newman's oil and vinegar dressing (or other Italian dressing). Maybe 1/4 cup -- use sparingly.
tortillas
Mix all the ingredients together and wrap in a tortilla. Yum. You can also add chopped tomatoes if you want, but all my kids don't like tomatoes. Maybe put them on the side.
